CALIFORNIA CABERNET SAUVIGNON · Grape Sourcing ·
Grapes for our wine were harvested from California’s finest Central Coast and Lodi valleys. In these areas, warm days allow the grapes to ripen with complexity and richness of flavor, while cool nights preserve the grapes’ crisp acidity. · Winemaking ·
Grapes for this wine were handled gently to minimize bitterness and fermented warm to maximize color and flavor extraction. The firm structure of the Cabernet was tempered with a touch of Merlot, which adds richness, smoothness and structure. The wine was aged for up to one year in new and used American and French oak. · Winemaker's Notes ·
Our Cabernet is a dark crimson color, with ripe berry and plum aromas, accented by toasty oak and vanilla. The wine’s crispness is balanced by rich, round flavors on the finish. Suggested pairings: Marinated flank steak grilled with garlic and onions, beef kabobs or wood-fire pizza with wild mushrooms and herbs.

CALIFORNIA CHARDONNAY · Grape Sourcing ·
Our winemaker selected grapes from vineyards across California’s best cool climate growing regions. For 2012 we harvested grapes from the North Coast down to the San Joaquin Region. With warm, sunny days moderated by cooling influences, conditions in these areas create an ideal climate for growing Chardonnay. Grapes harvested from a variety of vineyards and areas each provide unique flavor components that together create a balanced, complex and harmonious wine. · Winemaking ·
Grapes for this wine were harvested during cooler night and morning hours to highlight the crisp citrus flavors balancing the fruit flavors in our wine. After crushing, the must was fermented for up to twelve days at cool temperatures, around 60 degrees Fahrenheit, in stainless steel tank, adding a little French and American oak. A portion of the blend went through malolactic fermentation, adding a silkiness and body to the wine. Other white varietals are blended in to add floral notes and richness to the blend. · Winemaker's Notes ·
Ripe pineapple, golden apple and Anjou pear flavors are balanced by citrus notes and a smooth, creamy finish. The wine would be a heavenly match with smoked chicken salad with apples and walnuts, four-cheese pizza and light pasta dishes.

CALIFORNIA MERLOT · Grape Sourcing ·
Grapes for our Merlot were selected from among the best coastal growing regions in California’s North Coast and San Joaquin Region. In these areas, warm sunny days provide optimum grape ripening, while Pacific Ocean fog create cool nights and maintain the acidity in the grapes, resulting in a balanced Merlot full of flavor. · Winemaking ·
After de-stemming the grapes, the juice was fermented on the skins for up to 2 weeks at 80 degree F. This warm temperature aided in extracting color and desirable tannins from the skin of the grape. Gentle pressing of the grape is essential for getting additional flavor and color, while avoiding the overly drying tannins found in the seeds. After a full Malolactic conversion to soften the acids and add complexity to the nose, this wine was aged on French and American oak at cool temperatures until it was ready for the final blend. The final blend often uses dark red blenders, including Merlot crosses to achieve the right hue of red and fullness of structure, while retaining Merlot’s signature softness on the palate. · Winemaker's Notes ·
Our Merlot is a rich garnet color, with flavors of black cherries and plums with a soft, smooth finish. With its balanced acidity and ripe fruit flavors, this wine is an easy match with a wide range of main courses, including meats, pasta and vegetarian dishes.

CALIFORNIA PINOT NOIR · Grape Sourcing ·
Grapes for this wine were sourced from California’s best growing areas for Pinot Noir in the Sacramento and San Joaquin Valleys. A variety of vineyards were selected, from warmer vineyards that highlight ripe, fruity flavors in the grapes to cool coastal climate growing regions, where warm, sunny days are moderated by cooling maritime influences. The range of vineyards and growing areas creates a Pinot Noir that is crisp and complex yet approachable and luscious on the palate. · Winemaking ·
Grapes for this wine were gently squeezed, and cold soaked for up to 5 days prior to fermentation. A portion of the blend was fermented in open topped containers to soften tannins and provide more intense color and flavor extraction. This component was aged for 6-8 months in a combination of new and 1-2 year old French and American oak barrels, adding layers of toastiness, and complexity to the wine. The remaining portion of the blend was cold fermented in stainless steel to preserve the berry fruit characteristics and crisp acidity. · Winemaker's Notes ·
Fragrant cranberry and red raspberry aromas carry through to the palate, framed on the palate by notes of cedar, spice, vanilla with a crisp yet silky finish. The wine pairs well with light pasta dishes, grilled salmon tuna, or roasted chicken.

Grapes for our Sauvignon Blanc were drawn from primarily from vineyards in California’s North Coast, primarily from across Lake County, as well Napa and Sonoma Counties. In these regions, warm days and cool nights create an ideal climate for Sauvignon Blanc grapes. · Winemaking ·
The wine was fermented in stainless steel without the use of any oak and with neutral yeasts, to preserve the aromatic and floral aromas and capture the essence of the Sauvignon Blanc fruit. The palate of grapes from various coastal regions in the wine provided a full spectrum of Sauvignon Blanc varietal characteristics, ranging from melon and fig flavors to lemon grass and zesty citrus. A dash of Muscat adds fruity, floral notes to the aroma and palate. · Winemaker's Notes ·
This wine displays crisp Sauvignon Blanc characteristics of juicy peaches, pears, golden apples with honey nuances that linger on the palate. This wine will enliven dishes that call for a splash of fresh citrus, such as seafood, ocean fish or poultry. It also makes a refreshing pairing with lighter fare such as a cheese plate, fruit or salad.
